Engineering is the practice of applying scientific, mathematical, social, economic, and practical knowledge towards researching, inventing, designing, and building many kinds of structures, machines and systems. Clearly, it is an extremely broad term with many definitions and applications.
An engineering firm might specialize in one or several of the fields of engineering, the most prominent of which are chemical, civil, electrical, and mechanical engineering. There are a number of smaller branches in the field, pretty much all of which would fall under the heading of at least one of these categories.
As an example, a firm that specializes in chemical engineering would deal exclusively with using applied chemistry and other physical sciences in the interest of turning raw chemicals and materials into usable products. Processes related to the extraction and refinement of oil, as well as the production of gas and other petroleum-based products, fall under the heading of chemical engineering, as do many applications related to the creation of new kinds of medicine, amongst other things.
These are just a couple of many applications for chemical engineering; the other headings of engineering have just as many uses in as much a variety of fields. Engineering firms may be owned as a subsidiary of a larger company, dedicated entirely to the research and development of that companys products, while others work on a contract basis, able to be hired in the interest of exploring whatever application that interested party dictates. An engineer, as an individual, may be employed by a company full time, or on that same kind of contract or consultation basis.
